Let’s Talk About: Pies
More specifically, our pies. We’re serving 10-inch Neapolitan style pizzas baked in our mobile wood-fired oven.
For two years, we’ve been constantly refining and fine-tuning our recipe. We’ve experimented with everything from same-day or week-long ferments to sourdough and preferments.
Ultimately, we’ve landed on a recipe that takes advantage of a poolish, combined with a cold fermentation period that lasts a minimum of 48 hours, using a tiny amount of yeast.
The end result is a crust that’s loaded with flavor, doesn’t make your jaw hurt, and never leaves you feeling like you’ve eaten too much, even when you big back a 10-inch pie or two. (Ask us how we know!)
It’s cliche to say: We’re always going to use the best ingredients possible, but we mean it. And, of course, locally sourced ingredients are a priority, especially when it comes to seasonal items. Supporting our local community, be it Pueblo or the state of Colorado, means a lot to us. We hope it means something to you, too.
Our menu is small. That’s intentional. We’re strong believers in not trying to do too much. When that happens, quality suffers, and we’re determined to offer the best pizza in town.
We’ll have three mainstays: Cheese, pepperoni, and sausage.
And if you’re so inclined, we offer Extra Deliciousness for you to customize your pie, such as Pueblo Green Chiles or Colorado-based Local Hive Hot Honey.
Additionally, we’ll have rotating specials to round out our menu each time we go out. We’re going to have fun with our specials. We’ve been refining a pickle pizza for longer than we’d like to admit, and we’re always brainstorming the next tasty creation. We're open to requests, as well.
And, no, we aren’t afraid to put pineapple on pizza. There are no rules as far as we’re concerned.

Let’s Talk About: Sips
When it comes to Sips, our goal has always been to offer drinks that are different. Sure, we could go to Sam’s Club and buy whatever they have in stock and sell that, but that’s boring. We don’t like boring.
Not to mention, half of our name is literally about drinks.
So, over the last year we’ve been searching for a drink lineup that’d do our name proud.
We experimented a bit with various hop and flavored seltzer waters. If you attended our private preview event last October, then you saw the wide range of drinks we were thinking about selling. And you also likely were one of the attendees that left feedback saying those drinks weren’t it. Heard.
Since then, we’ve tried countless drinks from a long list of brands. Some were made with probiotics, some with prebiotics (Did you know there’s a difference? Do you care?) and at the end of it all, we’ve kept coming back to one brand: Liquid Death.
Liquid Death has more than just plain water, and its recently expanded its offerings beyond flavored sparkling water, with an entire line of soda flavors, in addition to its delicious tea flavors. (Admittedly, it still calls all of its drinks flavored sparkling water... but now they taste like sodas.)
Our favorite part, besides the flavors and kick-ass branding that aligns with our thinking (and frankly, life goals) is that it’s a healthier option than regular soda.
But wait, there’s more!
We will also have a Premium Sips menu that will consist of non-alcoholic drinks and brews. If you’ve never had one of Athletic Brewing’s Hazy IPAs, you’re missing out. Not only does it taste like the real stuff, but you can crush as many as you want and feel like a million bucks the next day. There are many premium brands in this space and we plan on experimenting with them all, in due time.
As with our Pies, the Sips we serve is an area where we’re going to keep experimenting and trying new things until we get it right. But we're confident we're on the right track here.
